2019 Crystal Charity Ball Chair Pat McEvoy is a true lover of travel. She’s probably already booked a seat on the first trip to the moon. With that wanderlust gene, it was simple for her to pick her theme for the Dallas County children’s fundraiser — “South American Mosaic.”
For the annual CCB Midpoint Luncheon at Salum Restaurant on Wednesday, May 29, where the committee gets an update on the progress, Pat put her head together with Abraham Salum to add South American flavor to the menu. Despite having a three-day-old migraine, Abraham came up with the perfect feast including a family-style start (Peruvian fish and shrimp ceviche with salsa huancaina, Argentinian beef empanadas with chimichurri and Brazilian cheese bread), an entree (grilled beef culotte steak or grilled king salmon over a charred vegetable and arugula salad with oregano vinaigrette and grilled Provoleta cheese) and dessert (chocolate brigadeiros, arroz con leche Peruvian style and Argentinian alfajores).
